He's a Jedi Master formerly on the Jedi Council who died pretty much right after the Battle of Naboo, and who also apparently ordered a clone army from the Kaminoans.
Fes as in the person or just his name?

Jedi Master Syfo Dias was a a member of the Jedi High Council up until his death shortly after the battle for Naboo. Before his death, however, he ordered a massive clone army from the cloners of Kamino.
Syfo Dias ordered said clone army without the knowledge of the Jedi High Council, who's existence did not come to light until Maset Obi-Wan Kenobi came across the planet in his search for bounty hunter Jango Fett some ten years later.
As for the random question, i've never watched the show...
It's best to watch a furball collapse, analyzing the movements of the enemy. Watch how they maneuver, when they fire, how they break. Visualize your own attacks against those observations, then go in for the kill. Sometimes, though, you don't get that advantage. It's at these times where you go in guns blazing, but keep your head on a swivel.
