I can't believe they won't let you fly if it's over 12 knots.  It was gusting 35 knot perpendicular to the runway when I soloed.  What do they expect you to do if you have to land someplace really windy one day? 

What made it real interesting was the stand of trees at the approach. 
You are in the wind, the get below tree level = no wind, then out of the trees = wind back!!!
Made for some really interesting dynamics and required quick thinking/immediate action.  I remember my instructor fussing at me to slam those controls hard, "they won't break!!!" 
WOW, what a blast.

Oh and my instructor......and old P-38 Lightning pilot, he was a great man  ^^, died several years ago, I still miss him. 
He could tell some stories.  He also flew ...........you know what I'm going to say..........................P-51 Mustangs some ^^. 
He said the Mustang was the only plane he ever flew that you couldn't do full power take offs.  It has so much torque it would flip itself over on its back  :o . 
If you ever seen the size of a Mustang.......wow, that's a lot of torque.

Lot's of luck on your flying, and as my instructor suggested, you should take some acrobatics courses. 
Will greatly improve your skill and confidence.
